Tasty Potato Wedges Recipe

(serves 2-3)
Ingredients

2lb potatoes (washed)
3 tbsp olive oil
3 cloves freshly crushed garlic
2 tbsp finely chopped rosemary (optional)
Salt & pepper

Method

1. Preheat oven to 200c/Gas 6.

2. Cut the potatoes into large wedges (do not peel) and place into a bowl.

3. Add remaining ingredients to the bowl and mix well.

4. Place potatoes onto a baking tray and cook in the oven on the middle shelf until golden-brown, turn every so often so the potato wedges cook and brown evenly.  Cook for approx 45 minutes, may require longer in some ovens. Serve and enjoy.

Mozzarella and Tomato Salad

Mozzarella and Tomato Recipe

(serves 4)
Ingredients

8oz fresh buffalo mozzarella (cut into small pieces)
12 oz small fresh cherry tomatoes
2 garlic cloves (finely chopped)
1 handful fresh basil leaves
2 tbsp olive oil
salt & pepper
5 tsp Dijon mustard

Method

1. To make the dressing first blend the mustard, oil, vinegar and torn up basil leaves together in a large bowl.

2. Add the buffalo mozzarella and tomatoes then mix well until the cheese and tomatoes are coated with dressing. Serve.

Basic French Toast Recipe

Basic French Toast Recipe

(serves 3)
Ingredients

6 sliced of white or wholemeal bread
1/2 medium cup of milk
3 eggs, beaten
pinch of sugar
pinch of cinnamon
1 tablespoon of olive oil

Method

1. Beat the eggs in a large bowl, then add the milk, cinnamon and sugar. Mix well.

2. Use a fork or cooking tongs to dip each slice of bread into the mixture (one at a time). Dip it in long enough so it soaks the egg mixture both sides.

3. Heat the oil in a frying pan, once hot enough fry each piece of bread for 2 minutes each side until golden.

4. You can either serve straight away hot, or if you prefer try sprinkling a little icing sugar on top and put a handful of your favourite berries on. But if you’re feeling naughty go for a spoonful of syrup. Delicious!

Spicy Fried Chicken

Spicy Fried Chicken Recipe

(serves 4)
Ingredients

4 boneless skinless chicken breasts, halved lengthwise
1 tablespoon paprika
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1/2 teaspoon coriander
1/2 teaspoon oregano
salt /pepper
extra-virgin olive oil

Method

1. In a small mixing bowl combine, paprika, cumin, cayenne pepper, coriander, oregano and good pinch of salt and pepper.

2. In a large shallow baking dish, place chicken pieces and drizzle with olive oil to coat. Rub each piece with the spice mix and let them stand for about 10 minutes.

3. Heat a large skillet over medium high heat and brown the chicken pieces. Reduce heat, cover and cook for around 10 minutes each side.

4. Transfer to serving platter and enjoy.

Delicious Pesto Pasta Recipe

(serves 1)
Ingredients

150g tagliatelle
1 x good handful pine nuts
2 x handfuls of torn fresh basil leaves
5 tbsp extra virgin olive oil
salt and pepper

Method

1. To make the pesto, blend together in a food processor: all the freshly torn basil leaves, pine nuts (leaving a tablespoon of them to one side for later), extra virgin olive oil, sprinkling of salt and good dash of ground black pepper.

2. Cook the tagliatelle as per instructions on packet if fresh.

3. Drain pasta, add the pesto and mix so that all the pasta is coated.

4. Serve with the remaining pine nuts which you set aside on top. This is so simple yet tasty.
