Chilli Chicken Stir Fry Recipe

(serves 2)

2 chicken breasts (cut into thin strips)
4 spring onions (chopped small)
2 tbsp olive oil
2 crushed garlic cloves
3 thin slices of fresh ginger
1 large red chilli (chopped finely)
90ml chicken stock
2 tbsp light soy sauce


1. Heat the olive oil in a large frying pan, when hot add the chicken strips and stir fry for approx 2-4 minutes until the chicken is cooked.

2. Once chicken is cooked, place on a side plate. Add a little more oil to the pan then add the ginger, garlic, spring onions and chilli and stir fry for 3 minutes.

3. Place the chicken back in the pan, add the chicken stock and soy sauce and cook until the dish is bubbling. If preferred serve with noodles or rice.
